Brief: Where do we find and how can we exploit a design opportunity around cassava — one of the most ubiquitous and important calorie sources for Sub-Saharan Africa?
Time: 15 weeks
Team: 21 Yale students with diverse backgrounds
Role: Teaching Fellow
Class: Mechanical Engineering 491: Appropriate Technology for the
Developing World with support from: The Yale CEID
McCurdy served as Teaching Fellow while still an undergraduate after taking the class in the year prior. She facilitated the design process of a diverse team to develop a smallholder-farmer scale processing solution for cassava (which toxifies rapidly after being harvested unless properly processed).
